As the temperatures start to drop and the days grow shorter, many of us find our way to our favorite comfort foods. Soups, stews and heavier sides lends itself to the savory flavors we all crave. Unlike our sisters Spring and Summer, Fall leads us to our cozy blankets and warm fire places.
Nothing warms the soul more than the warm layers of flavor piled upon each other. This season, we’ve made a few adjustments to our menu from France to embrace not only the season but also wrap you in all the comforts only Fall can bring.
We start with a classic French Onion Soup. Although simple in concept, this soup builds in its depth of flavor as the ingredients marry together. An ocean of onion is bathed in a broth that’s built with beef, sherry and other herbs that will literally send anyone to the moon and back. It’s finished, traditionally, with toasted garlic bread or croutons and baked with several layers of melty, bubbly cheese. Each bite is heaven on earth.
Next in our line-up is a very traditional stew that packages tender chicken thighs with vegetables, wine and herbs to create the coveted Coq Au Vin. Its close cousin would be the famous Boeuf Bourguignon. What’s lovely about Coq Au Vin is that it’s simple to make but equally deep in its flavor. And for those of us who don’t have hours of time to invest, this dish comes together in less than an hour. You and those you love will truly think you spent hours slaving over the stove to create this masterpiece!!
Lastly, no Frenchman would consider a meal complete without some lightness on the side. To balance out this season’s menu, we felt the Salad Lyonnaise would be the perfect match. The bitter greens coupled with pan fried lardons and a poached egg just simply makes this menu memorable.
